Ingredients
2 tablespoons yeast, 1 tablespoons of sugar, 1/2 cup of milk, 1/2 teaspoons salt, 2 tablespoons oil, 4 tablespoons yogurt, water as required, 1kg of mutton (boneless), 1/2 cup oil, 2 cup all-purpose flour, 1 cup onion, 1 cup tomato slices, 1 tablespoons ginger paste, 1 tablespoons garlic paste, 1/2 teaspoons Black pepper, 1/2 teaspoons white pepper, 1 teaspoons coriander powder, salt to taste, 1/2 teaspoons garam masala, 1/2 teaspoons nutmeg powder, water as required, 10-15 cloves, 1-2 cinnamon stick, 2 bay leaf, 1 tablespoons vinegar, 1 teaspoons cumin seeds, 2 cup rice (soaked), 2 & 1/2 cup water, 2 bay leaf, 1/2 cup pea (boiled), 1/2 cup carrots (boiled), fried onion as required, coriander leaves as required, fried almonds as required, fried cashew as required, saffron mixed in water as required, melted butter for greasing, green chilies sliced as required
Recipe
In a bowl add flour, salt, oil, and yogurt. In a separate bowl mix warm milk, sugar, yeast well and leave it for 5 to 10 minutes. Mix the mixture into the flour and knead a soft dough. Cover it with a cling film for one hour. In a pan heat oil, add onion and cook until translucent. Add ginger-garlic paste and cook for 2-3 minutes, then add tomatoes and cook until skin separates. Now add mutton and cook until it changes color. Add black pepper, white pepper, coriander powder, salt, garam masala, cloves, nutmeg powder, cinnamon stick, and bay leaf, mix well.
Add half cup of water and cook for 10 to 15 minutes on medium flame. Then add another half cup of water, cover and let it simmer for 15 to 20 minutes on low flame. Take it off the flame and let it cool down.
Boil water in a pan, add cumin, salt, bay leaf and vinegar in it. Add rice and cook them cook on low flame until 80 percent cooked. Roll out the dough into a large disk in round shape. Grease a glass bowl with melted butter, sprinkle nigella seeds.
Put the dough in a glass bowl, covering all the sides properly. Now make layers with rice, mutton gravy, peas, carrots, fried onion, and coriander leaves. Sprinkle almonds, cashew, saffron water and green chilies on top. Cover it with dough. Bake in a preheated oven at 180 degrees for 20 to 30 minutes or until golden. After that close your oven and serve the tasty ‘Parda Biryani’.
